Ingredients
INGREDIENTS
- 4 large flour tortillas
- 2 ripe mangoes, peeled and sliced
- 1 cup shredded coconut
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 tablespoon honey
- 1 tablespoon coconut oil, for frying
- Pinch of salt
Instructions
- Heat a non-stick skillet over medium heat.
- In a shallow bowl, mix together shredded coconut and a pinch of salt.
- Dip each tortilla in flour, then in beaten eggs, and finally coat with shredded coconut.
- Place a few mango slices in the center of each tortilla, then roll tightly, sealing the ends.
- Add coconut oil to the heated skillet, then fry the taquitos seam-side down until golden brown and crispy, about 3-4 minutes per side.
- Remove taquitos from the skillet and drain on paper towels.
- Drizzle with honey and serve warm.
Notes
Note: For added flavor, sprinkle a little cinnamon into the coconut mixture before coating the taquitos.
For a healthier version, consider using whole wheat tortillas instead of traditional flour ones. If you’re not a fan of mango, feel free to substitute with ripe bananas or peaches for a different fruity twist.
These taquitos are best enjoyed fresh, but you can store leftovers in an airtight container in the fridge for up to two days. To reheat, simply pop them in the oven at 350°F (175°C) for a few minutes to regain their crispiness.
