Ingredients

INGREDIENTS

  • 2 1/2 cups shredded unsweetened coconut
  • 1/2 cup granulated sugar
  • 2 large egg whites
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 ounces dark chocolate, chopped
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine shredded coconut, sugar, egg whites, vanilla extract, and salt. Stir until well mixed.
  3. Scoop tablespoon-sized portions of the coconut mixture onto the prepared baking sheet, spacing them about an inch apart.
  4. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown. Remove and let cool completely on the baking sheet.
  5. While the macarons cool, prepare the chocolate ganache by heating the heavy cream in a small saucepan over medium heat until it starts to simmer.
  6. Remove from heat and add the chopped dark chocolate. Let it sit for a minute before stirring until smooth and glossy.
  7. Once the macarons are cool, pair them up in sets of two. Spread or pipe a dollop of ganache on the flat side of one macaron and top with the other macaron, pressing gently together to form a sandwich.
  8. Dip half of each macaron sandwich in the remaining ganache, allowing the excess to drip off. Place on a wire rack to set.

Notes

Tip: For a beautiful finish, sprinkle some toasted coconut on the ganache before it sets.

To ensure your macarons come out perfectly, use room temperature egg whites and let them age for a day in the fridge before whipping. This helps to achieve a stable meringue.

Feel free to customize the filling by adding flavors like almond extract or vanilla for an extra touch. If you’re looking for a healthier option, consider dark chocolate for dipping, which pairs beautifully with the sweetness of the coconut.

Store these sandwiches in an airtight container in the fridge for up to a week, or freeze them for longer storage. Just let them thaw in the fridge before serving!
