Ingredients

INGREDIENTS

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9x13 inch baking dish with parchment paper.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
  3. In a large bowl, beat the softened cream cheese until smooth. Add in the pumpkin puree, powdered sugar, and vanilla extract, mixing until well combined.
  4. Beat in the eggs one at a time, mixing until just incorporated. Add the cinnamon, nutmeg, ginger, and salt, and mix until smooth.
  5. Pour the pumpkin cheesecake filling over the crust, smoothing it out evenly. Use a knife to swirl in additional cinnamon if desired.
  6. Bake for 40-45 minutes, or until the center is set but slightly jiggly. Remove from the oven and let cool completely in the pan.
  7. Refrigerate for at least 4 hours before slicing into bars. Serve chilled or at room temperature.

Notes

Tip: For an extra touch, drizzle caramel sauce over the cheesecake bars before serving.

Make sure to use room temperature cream cheese for a smooth filling without lumps. If you prefer a stronger pumpkin flavor, feel free to increase the pumpkin puree slightly. For a gluten-free version, substitute the crust with gluten-free graham crackers or almond flour.

Store your cheesecake bars in an airtight container in the refrigerator for up to 5 days. They can also be frozen for up to 3 months, so you can enjoy this fall treat anytime!
