Ingredients

INGREDIENTS

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh basil, finely chopped
  • 4 shortcakes, store-bought or homemade
  • Basil leaves for garnish

Instructions

  1. In a bowl, combine sliced strawberries and granulated sugar. Let them sit for about 10 minutes to macerate and release their juices.
  2. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold in the chopped basil.
  3. Crumble the shortcakes into bite-sized pieces.
  4. In serving glasses, layer crumbled shortcake, a spoonful of macerated strawberries, and a layer of basil whipped cream. Repeat the layers until the glasses are filled.
  5. Top with additional strawberries, a dollop of whipped cream, and garnish with fresh basil leaves. Serve immediately or chill until ready to serve.

Notes

Storage: These parfaits are best enjoyed fresh but can be assembled and refrigerated for up to 2 hours. The strawberries may release moisture if stored longer.

For the best flavor, use ripe, in-season strawberries. You can also substitute basil with mint for a different herbal note. If you’re short on time, store-bought shortcakes work just as well!

These parfaits can be made a few hours in advance; just keep the layers separate until you’re ready to serve to prevent sogginess. Serve them in clear glasses or jars for a beautiful presentation!
