INGREDIENTS

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves, packed
  • Salt and pepper to taste
  • 1 ciabatta loaf, cubed
  • 2 tablespoons butter, melted

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and smoked paprika, cooking for another minute until fragrant.
  4. Pour in crushed tomatoes and vegetable broth, then bring to a boil.
  5. Reduce heat, add basil leaves, and simmer for 20 minutes.
  6. Blend the mixture until smooth using an immersion blender or in batches in a countertop blender.
  7. Season with salt and pepper to taste, then keep warm.
  8. In a separate bowl, toss ciabatta cubes with melted butter and a pinch of salt.
  9. Spread the croutons on a baking sheet and toast in a preheated oven at 375°F (190°C) for about 10 minutes, or until golden brown.
  10. Serve the bisque hot, topped with toasted ciabatta croutons.

Notes

Tip: For a vegan version, use coconut oil for sautéing and omit the butter on the croutons.

To enhance the smoky flavor, consider adding a dash of smoked paprika or using fire-roasted tomatoes. If you prefer a creamier texture, blend in some heavy cream or coconut milk just before serving.

For storage, keep the bisque in an airtight container in the fridge for up to 3 days. Reheat gently on the stove, adding a splash of water or broth if it thickens too much.
