Ingredients

INGREDIENTS

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 1/4 cup olive oil
  • 2 large eggs
  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and black pepper.
  3. In another bowl, combine the milk, olive oil, and eggs, and whisk until well blended.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Fold in the chopped spinach, crumbled feta cheese, Parmesan cheese, and garlic powder until evenly distributed.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean and the tops are lightly golden.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Tip: For added flavor, you can sprinkle some extra feta cheese on top of the muffins before baking.

When preparing these muffins, be sure to thoroughly squeeze out the moisture from the spinach to avoid a soggy texture. For a twist, consider adding sun-dried tomatoes or olives to enhance the Mediterranean flavor profile. If you don’t have feta cheese on hand, crumbled goat cheese makes a delightful substitute.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. These muffins can also be frozen for up to a month; just reheat in the microwave for a quick breakfast fix!
