  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chopped pecans
  • 1 cup caramel sauce

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9x9-inch baking pan and line with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, mix graham cracker crumbs and melted butter until combined. Press evenly into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth and creamy. Add the sugar and vanilla, and mix until combined.
  4. Add the eggs one at a time, mixing well after each addition. Pour the cheesecake mixture over the graham cracker crust and spread evenly.
  5. Sprinkle the chopped pecans over the cheesecake mixture, pressing lightly to embed them.
  6. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the bars cool in the oven for 10 minutes.
