Ingredients

INGREDIENTS

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1 tbsp cinnamon
  • 1/4 cup maple syrup
  • 1/4 cup powdered sugar
  • 1 tbsp milk

Instructions

  1. Preheat the oven to 325°F (163°C) and line a mini muffin tin with paper liners.
  2. In a bowl, beat together the cream cheese, granulated sugar, egg, and vanilla extract until smooth and creamy.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the cream cheese mixture.
  4. In a separate bowl, mix the melted butter, brown sugar, and cinnamon to create a cinnamon filling.
  5. Spoon the cheesecake batter into each muffin cup, filling them about halfway. Add a teaspoon of the cinnamon filling on top of the batter, then swirl lightly with a toothpick.
  6. Drizzle the maple syrup over the top and swirl again if desired.
  7. Bake for 20-25 minutes, or until set and lightly golden on top. Let cool completely before removing from the tin.
  8. For the glaze, mix powdered sugar with milk until smooth and drizzle over the cooled bites before serving.

Notes

Tip: For a more intense maple flavor, consider adding a splash of maple extract to the batter.

To ensure your cheesecake bites set perfectly, be sure to chill them for a few hours after baking. This will help them firm up and make them easier to cut.

If you’re looking to add a twist, try substituting the cinnamon with pumpkin spice for a delightful seasonal variation. You can also use maple syrup in place of part of the sugar for added flavor.

Store any leftovers in an airtight container in the refrigerator for up to three days. Enjoy them chilled or at room temperature!
