Ingredients

INGREDIENTS

  • 4 salmon fillets (6 oz each)
  • 2 tablespoons white miso paste
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh orange juice
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons sesame oil
  • 4 cups fresh spinach
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the miso paste, honey, soy sauce, orange juice, and lemon juice until smooth.
  3. Place the salmon fillets on a lined baking sheet and season with salt and pepper.
  4. Brush the miso glaze generously over the salmon fillets.
  5. Bake the salmon in the preheated oven for 10-12 minutes, or until cooked through and flaky.
  6. While the salmon bakes, heat sesame oil in a large skillet over medium heat.
  7. Add the spinach to the skillet and sauté until wilted, about 3-4 minutes.
  8. Sprinkle the sesame seeds over the spinach, stirring to combine and cook for an additional minute.
  9. Remove the salmon from the oven and let it rest for a few minutes before serving.
  10. Plate the salmon alongside the sesame spinach and garnish with chopped green onions, if desired.

Notes

Tip: For extra crunch, toast the sesame seeds in a dry skillet for a minute before adding them to the spinach.

For a quick and easy meal prep, you can marinate the salmon in the miso mixture a few hours ahead of cooking. This will enhance the flavor even more!

If you can’t find miso paste, you can substitute with tahini or peanut butter mixed with a little soy sauce and lemon juice, although the taste will differ slightly. Additionally, feel free to add garlic or ginger to the spinach for an extra flavor boost.

Store any leftovers in an airtight container in the refrigerator for up to two days. Reheat gently in the microwave or on the stove over low heat to avoid drying the salmon out.
