Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, shredded coconut, baking powder, and salt.
  3. In another bowl, beat the egg whites until stiff peaks form.
  4. Gently fold the egg whites into the dry ingredients, ensuring not to deflate the mixture.
  5. Scoop the mixture onto the prepared baking sheet, forming small mounds.
  6. Bake for 12-15 minutes or until the clouds are golden and set.
  7. Remove from the oven and let cool slightly before serving. Drizzle with honey or serve with fresh fruit.

Tip: These breakfast clouds are best enjoyed fresh out of the oven but can be stored in the refrigerator for up to 3 days.

For best results, make sure your egg whites are at room temperature before whipping them; this helps achieve maximum volume. If you want to make these vegan, you can substitute the egg whites with aquafaba (the liquid from canned chickpeas) in a similar quantity.
