Ingredients

INGREDIENTS

  • 1 cup crushed graham crackers
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup powdered sugar
  • 1/3 cup melted butter
  • 1 cup fresh raspberries
  • 1 1/2 cups dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper.
  2. In a mixing bowl, combine crushed graham crackers, cocoa powder, powdered sugar, and melted butter. Mix until well combined.
  3. Press the mixture firmly into the bottom of the prepared baking dish to form an even layer. Bake for 10 minutes, then let cool completely.
  4. Once the crust is cool, distribute the fresh raspberries evenly over the crust.
  5. In a heatproof bowl, combine the dark chocolate chips and coconut oil. Melt in the microwave in 30-second intervals, stirring in between, until smooth and fully melted.
  6. Pour the melted chocolate over the raspberries, spreading it evenly with a spatula to cover the entire surface.
  7. Refrigerate the bars for at least 2 hours, or until the chocolate is fully set. Once set, lift the bars out of the pan using the parchment paper and cut into squares.
  8. Serve chilled and enjoy your Crispy Chocolate-Covered Raspberry Dream Bars!

Notes

Tip: For a garnish, sprinkle some crushed nuts or a few extra raspberries on top of the chocolate before it sets.

For the best results, use fresh raspberries for a tart flavor that perfectly complements the sweetness of the chocolate. If you can’t find fresh raspberries, frozen ones work as well, but be sure to drain any excess liquid.

These bars can be stored in an airtight container in the refrigerator for up to a week. You can also freeze them for longer storage; just thaw them in the fridge before serving. For a fun variation, try adding a splash of vanilla extract to the chocolate coating for an extra layer of flavor!
