Ingredients

INGREDIENTS

  • 1 cup cooked quinoa
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh herbs (parsley, basil, or cilantro)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper to taste
  • Oil for frying

FOR THE LEMON AIOLI

  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cooked quinoa, minced garlic, chopped herbs, breadcrumbs, Parmesan cheese, eggs, salt, and pepper. Mix until thoroughly combined.
  2. Form mixture into small patties, about 2-3 inches in diameter.
  3. In a skillet over medium heat, heat oil for frying. Once hot, carefully add the fritters in batches, cooking until golden brown, about 3-4 minutes on each side.
  4. Remove fritters and place them on a paper towel-lined plate to drain excess oil.
  5. To prepare the lemon aioli, whisk together mayonnaise, lemon juice, minced garlic, salt, and pepper in a small bowl until smooth. Adjust seasoning to taste.
  6. Serve the fritters warm with a side of lemon aioli for dipping.

Notes

Tip: For a vegan version, substitute eggs with flaxseed meal mixed with water and use vegan mayonnaise for the aioli.

For best results, make sure your quinoa is well-cooked and cooled before mixing; this helps the fritters hold together better. You can experiment with different herbs like dill or parsley based on your preference. If you want to make these fritters even crispier, consider using panko breadcrumbs instead of regular breadcrumbs.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 375°F (190°C) for about 10 minutes to regain that crispiness.
