Ingredients

INGREDIENTS

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 ripe avocado
  • 1 small lime, juiced
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 small jalapeño, minced (optional)
  • 1/2 cup cherry tomatoes, diced

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into thin rounds or wedges.
  3. In a large bowl, toss the sweet potato slices with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
  4. Spread the sweet potatoes in a single layer on the prepared baking sheet and bake for 20-25 minutes, flipping halfway, until golden and crispy.
  5. While the sweet potatoes are baking, prepare the avocado salsa by mashing the avocado in a bowl and mixing in the lime juice, red onion, cilantro, jalapeño (if using), and tomatoes. Season with salt to taste.
  6. Once the sweet potatoes are done, remove them from the oven and let them cool slightly before assembling the nachos.
  7. Top the crispy sweet potato slices with generous spoonfuls of avocado salsa and serve immediately.

Notes

Tip: For an extra kick, add some crumbled feta cheese or a sprinkle of chili powder on top before serving.

To ensure your sweet potato nachos remain crispy, make sure to slice them evenly and bake them in a single layer without overcrowding the baking sheet. You can easily customize the toppings based on your preferences—try adding black beans or shredded cheese for extra flavor!

For storage, keep the sweet potatoes and avocado salsa separate to maintain freshness. Reheat the sweet potato nachos in the oven to regain their crispiness.
