This silky golden lassi marries sweet cooked carrots with warming turmeric and ginger for a vibrant, healthful twist on a classic yogurt drink. A touch of honey brightens the flavor while a hint of salt balances the sweetness.
Blended until ultra-smooth, this lassi requires just a few pantry staples and under 30 minutes from start to finish. It’s perfect for a refreshing breakfast beverage, midday pick-me-up, or a cooling side to spicy dishes.
Ingredients
FOR THE LASSI
- 2 cups plain whole-milk yogurt
- 1 cup cooked carrots (roasted or steamed until tender)
- ½ cup milk (dairy or plant-based)
- 1 tsp ground turmeric (or 1 tbsp fresh grated turmeric)
- 1 tsp grated fresh ginger
- 2 tbsp honey, plus extra for drizzling
- Pinch of salt
- 4–6 ice cubes (optional)
FOR THE HONEYED PISTACHIO DUST
- ½ cup shelled pistachios
- 1 tbsp honey
- Pinch of salt
Instructions
- If using fresh carrots, roast at 400°F for 20 minutes or steam until very tender. Let cool, then rough-chop.
- In a small skillet over medium-low heat, toast pistachios, stirring frequently, until fragrant, about 3 minutes. Transfer to a bowl to cool slightly.
- Return cooled pistachios to the skillet, add 1 tablespoon honey and a pinch of salt, and warm gently until honey coats the nuts.
- Spread honeyed pistachios in a thin layer on parchment. Once fully cooled, chop or pulse in a food processor to a coarse dust. Set aside.
- In a blender, combine yogurt, cooked carrots, milk, turmeric, ginger, 2 tablespoons honey, and a pinch of salt. Blend on high until silky-smooth.
- Taste and adjust sweetness or spice. Add a few ice cubes and pulse briefly if you prefer a chilled, frothy texture.
- Divide the lassi among four glasses, drizzle a little extra honey on top, and sprinkle generously with honeyed pistachio dust.
- Serve immediately, garnished with an extra pinch of pistachio dust or a small carrot ribbon if desired. Enjoy chilled.
Notes
Storage: Keep any leftover lassi refrigerated in an airtight container up to 24 hours. Stir well before serving.
