Ingredients

INGREDIENTS

  • 1 pound asparagus, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Kitchen twine or skewers

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, chopped parsley, chopped basil, salt, and black pepper.
  3. Take 4-5 asparagus spears and bundle them together. Secure the bundle with kitchen twine or a skewer.
  4. Repeat the bundling process for the remaining asparagus spears.
  5. Brush each asparagus bundle generously with the garlic-lemon marinade.
  6. Place the bundles directly on the preheated grill, cooking for about 8-10 minutes, turning occasionally, until the asparagus is tender and slightly charred.
  7. Remove the bundles from the grill and serve warm, garnished with additional lemon zest or herbs if desired.

Notes

Storage: Store leftover bundles in an airtight container in the refrigerator for up to 2 days. Reheat on the grill for best results.

For the best flavor, try using fresh herbs like thyme or rosemary. If you don’t have them, dried herbs can work in a pinch, but fresh is always best! Make sure to soak any skewers in water for about 30 minutes if you’re using wooden ones to prevent burning.

These bundles can be stored in the refrigerator for up to two days after grilling. Simply reheat them on the grill for a few minutes before serving to enjoy their fresh taste. Serve them alongside grilled chicken, fish, or as part of a vibrant veggie platter!
