Instructions

  1. In a bowl, whisk together the coconut milk, maple syrup, lime juice, lime zest, and vanilla extract until well combined.
  2. Stir in the chia seeds, making sure there are no clumps. Let the mixture sit for about 10 minutes, then stir again to break up any clumps of chia seeds.
