  • Sparkling water or soda, to taste
  • Ice cubes, for serving

Instructions

  1. In a blender, combine the watermelon cubes, mint leaves, lime juice, and honey or agave syrup if using.
  2. Blend until smooth, then strain the mixture through a fine mesh sieve into a pitcher to remove any pulp.
  3. Fill glasses with ice cubes and pour the watermelon mixture over the ice, filling each glass about halfway.
  4. Top each glass with sparkling water or soda to taste, stirring gently to combine.
  5. Garnish with extra mint leaves and a slice of watermelon, then serve immediately.
