  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cardamom
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 3/4 cup chopped pistachios
  • 1/4 cup chopped dried fruit (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, combine the all-purpose flour, almond flour, baking powder, baking soda, salt, and ground cardamom. Whisk together and set aside.
  3. In a separate large bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
  6. Fold in the chopped pistachios and dried fruit, if using, until evenly distributed.
  7. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Tip: For extra flavor, toast the pistachios lightly before chopping and adding them to the batter.

For a nut-free version, simply replace the pistachios with sunflower seeds. You can also substitute cardamom with cinnamon if you prefer a more familiar flavor.
