  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Cook the fettuccine according to package instructions until al dente; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat; add minced garlic and sauté until fragrant, about 1 minute.
  3. Add shrimp to the skillet, seasoning with salt and pepper; cook until shrimp are pink and opaque, about 3-4 minutes per side.
  4. Stir in sun-dried tomatoes and cook for an additional 2 minutes.
  5. Add the cooked fettuccine, lemon juice, and lemon zest to the skillet; toss to combine and heat through.

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently on the stove, adding a bit of water or broth to bring back the sauce’s consistency.

Savory Maple-Mustard Glazed Chicken Thighs with Herb Quinoa

by Linda October 14, 2026
written by Linda

These Savory Maple-Mustard Glazed Chicken Thighs are a delicious twist on a classic dish, combining the sweetness of maple syrup with the tanginess of Dijon mustard. The result is a sticky, flavorful glaze that perfectly complements the juicy chicken. Served alongside herb quinoa, this dish is not only tasty but also packed with nutrients.

Cooking chicken thighs ensures that they remain moist and tender, making them perfect for absorbing the delicious glaze. The herb quinoa provides a light, fluffy base that enhances the overall flavor profile, making this meal both satisfying and wholesome.

Ingredients

INGREDIENTS

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup quinoa
  • 2 cups chicken broth or water
  • 1/4 cup chopped fresh herbs (parsley, thyme, or dill)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, salt, and pepper to create the glaze.
  3. Place the chicken thighs in a baking dish and pour the glaze over them, ensuring they are well coated.
  4. Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy.
  5. While the chicken is baking, rinse the quinoa under cold water.
  6. In a saucepan, combine quinoa and chicken broth (or water). Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until liquid is absorbed.
  7. Remove the quinoa from heat and fluff with a fork, then stir in the chopped herbs.
  8. Serve the glazed chicken thighs over a bed of herb quinoa, drizzling any remaining glaze over the top.

Notes

Tip: For a spicy kick, add a pinch of red pepper flakes to the glaze.

For best results, marinate the chicken thighs in the glaze for at least 30 minutes, or up to 4 hours, to enhance the flavor. If you’re short on time, a quick 10-minute marination will still provide great taste.

Feel free to substitute honey for maple syrup if desired, or use whole grain mustard for a spicier kick. Leftover glazed chicken can be stored in the fridge for up to 3 days and makes a great addition to salads or wraps.

Ingredients

INGREDIENTS

  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes
  • 1 teaspoon sugar
  • Salt to taste
  • 4 flatbreads (store-bought or homemade)
  • 1 cup crumbled feta cheese
  • 2 tablespoons balsamic glaze
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sliced onions and sprinkle with salt and sugar. Cook, stirring occasionally, for about 25-30 minutes until the onions are caramelized and golden brown.
  3. Stir in red pepper flakes for the last 5 minutes of cooking.
  4. Preheat the oven to 400°F (200°C).
  5. Place the flatbreads on a baking sheet. Spread the caramelized onion mixture evenly over the flatbreads.
  6. Sprinkle crumbled feta cheese on top of the onions.
  7. Bake in the preheated oven for 8-10 minutes, until the flatbreads are crispy and the feta is slightly melted.
  8. Drizzle with balsamic glaze and sprinkle with fresh parsley before serving.

Notes

Tip: For added texture, you can top the flatbreads with arugula or spinach after baking.

For the best caramelized onions, cook them low and slow—about 25-30 minutes—stirring occasionally to avoid burning. You can also add a splash of balsamic vinegar to the onions towards the end of cooking for extra flavor.

If you’re short on time, store-bought flatbreads work just as well as homemade. Feel free to substitute the feta with goat cheese or even a dairy-free alternative for a vegan option. Leftover flatbreads can be stored in the fridge for up to 2 days; reheat in the oven for a crispy texture.

For a healthier spin, you can substitute the cream cheese with Greek yogurt. If you’re looking for a twist, try adding cooked bacon or sun-dried tomatoes to the filling for extra flavor. Store any leftovers in an airtight container in the fridge for up to 2 days, and reheat in the oven for a few minutes to enjoy them warm again.

Ingredients

INGREDIENTS

  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons cornstarch
  • 2 tablespoons olive oil
  • 1/4 cup teriyaki sauce
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Sesame seeds and green onions for garnishing

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed sweet potatoes with cornstarch until evenly coated.
  3. Drizzle the olive oil over the sweet potatoes and mix well. Spread them in a single layer on the prepared baking sheet.
  4. Bake for 25 minutes or until golden and crispy, flipping halfway through for even cooking.
  5. While the sweet potatoes are baking, prepare the avocado dip by mashing the avocado in a bowl and mixing in lime juice, salt, and pepper until smooth.
  6. Once the sweet potato bites are done, remove them from the oven and drizzle with teriyaki sauce, tossing to coat evenly.
  7. Serve the sweet potato bites warm, garnished with sesame seeds and sliced green onions, alongside the creamy avocado dip. Enjoy!

If you want to add a spicy kick, consider mixing a dash of sriracha into the avocado dip. Leftover sweet potato bites can be stored in an airtight container for up to 3 days, and they reheat well in the oven for a few minutes.

Ingredients

INGREDIENTS

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Vegetable oil for frying

FOR THE SPICY AIOLI

  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1/2 tsp cayenne pepper
  • Salt to taste

Instructions

  1. In a mixing bowl, combine flour, baking powder, baking soda, salt, black pepper, thyme, and rosemary.
  2. In another bowl, whisk together buttermilk, egg, and Parmesan cheese until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  4. Heat vegetable oil in a deep pan over medium heat until it reaches 350°F (175°C).
  5. Using a small scoop or spoon, drop dough into the hot oil, frying until golden brown all over, about 2-3 minutes per batch.
  6. Remove donut holes and drain on paper towels.
  7. For the aioli, mix mayonnaise, minced garlic, lemon juice, cayenne pepper, and salt in a bowl until well combined.
  8. Serve the warm donut holes with the spicy aioli on the side.

Notes

Tip: Adjust the amount of cayenne in the aioli to suit your spice preference.

When making your donut holes, ensure your oil is at the right temperature (around 350°F) to achieve that perfect crispy exterior. If the oil is too hot, the donut holes will cook too quickly on the outside while remaining raw inside.

For a variation, try adding different herbs such as dill or parsley based on your taste preference. You can also adjust the heat level of the aioli by adding more or less cayenne pepper.

Store any leftover donut holes in an airtight container at room temperature for up to two days, but they are best enjoyed fresh!

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 1 cup sharp cheddar cheese, shredded

  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the cheddar cheese and chives until evenly distributed.
  5. Add the milk gradually, mixing until just combined; do not overmix.
  6. Turn the dough onto a floured surface and gently knead it a few times, then pat it into a 1-inch thick circle.
  7. Cut into wedges or use a round cutter to shape the scones, and place them on a baking sheet lined with parchment paper.

For best results, use cold butter to create the flakiest texture in your scones. If you don’t have fresh chives, green onions can be a great substitute.

To store the scones, keep them in an airtight container at room temperature for up to two days or freeze them for longer storage. Simply reheat in the oven for a few minutes to restore their deliciousness.

  • 8 fresh figs, halved
  • 2 tablespoons honey
  • 1/4 cup shelled pistachios, chopped
  • 1 tablespoon butter
  • Pinch of salt
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the slices of rustic bread on a baking sheet and toast in the oven until golden brown and crispy, about 5-7 minutes.
  3. In a skillet over medium heat, melt the butter and add the halved figs. Cook for 3-4 minutes until they begin to soften.
  4. Drizzle honey over the figs and continue to cook for another 2-3 minutes, allowing the figs to caramelize slightly. Remove from heat.

Storage: These toasts are best enjoyed fresh, but you can store leftover caramelized figs in an airtight container in the fridge for up to 3 days.

Feel free to substitute honey with maple syrup for a vegan option, or add a dash of cinnamon to the ricotta for added warmth. These toasts are best served fresh, but you can prepare the individual components ahead of time and assemble just before serving.

Ingredients

INGREDIENTS

  • 1 cup fresh blueberries
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh thyme leaves
  • 2 cups tonic water
  • Ice cubes
  • Lemon slices and thyme sprigs for garnish

Instructions

  1. In a pitcher, combine fresh blueberries, lemon juice, and thyme leaves. Muddle gently to release some juice from the blueberries.
  2. Add tonic water and stir gently to mix. Taste and adjust sweetness if desired.
  3. Fill glasses with ice cubes and pour the blueberry-lemon mixture over the ice.
  4. Garnish each glass with lemon slices and fresh thyme sprigs before serving.

Notes

Tip: Use frozen blueberries as ice cubes to keep your drink chilled without diluting the flavor.

For an extra flavor boost, consider muddling a few fresh blueberries in the glass before adding the spritz ingredients. This will release even more blueberry juice and enhance the color. If you prefer a lower-calorie version, you can swap out the tonic water for a diet or zero-calorie alternative.

This drink can be made in larger batches for parties; just scale up the ingredients and serve in a large pitcher. To keep it chilled without diluting, add frozen blueberries instead of ice cubes!

Feel free to experiment with other herbs like mint or basil if you want to switch things up!
