Ingredients

INGREDIENTS

  • 2 bell peppers (red and yellow), sliced
  • 1 medium zucchini, sliced
  • 1 medium red onion, sliced
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon chipotle powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 avocado
  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon cilantro, chopped (for garnish)

Instructions

  1. In a large bowl, combine sliced bell peppers, zucchini, and red onion.
  2. Drizzle with olive oil, lime juice, chipotle powder, garlic powder, salt, and pepper. Toss to coat evenly.
  3. Preheat the grill to medium-high heat. Grill the marinated vegetables for about 5-7 minutes or until they are tender and have grill marks.
  4. While the vegetables are grilling, prepare the avocado crema by blending the avocado, sour cream or Greek yogurt, lime juice, and a pinch of salt until smooth.
  5. Warm the corn tortillas on the grill or in a pan for about 30 seconds on each side.
  6. Assemble the tacos by placing the grilled vegetables on the tortillas and drizzling with avocado crema. Garnish with chopped cilantro.
  7. Serve immediately with lime wedges on the side. Enjoy!

Notes

Tip: To enhance the flavor, let the vegetables marinate for at least 30 minutes before grilling.

For added crunch, consider topping your tacos with finely chopped red cabbage or radishes. If you prefer a milder flavor, reduce the amount of chipotle in the marinade or substitute it with a mild chili powder.

These tacos can be stored in the refrigerator for up to 2 days. Reheat the vegetables before serving, but the avocado crema is best enjoyed fresh. You can also try adding black beans or grilled corn for extra texture and flavor.

Ingredients

INGREDIENTS

  • 8 oz cherry tomatoes
  • 8 oz mozzarella balls
  • 8 oz salami slices
  • 1 cup bell pepper, diced
  • 1 cup cucumber, sliced
  • 1/2 cup olives, pitted
  • Fresh basil leaves
  • Salt and pepper to taste

FOR THE DRESSING

  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by washing and cutting them into appropriate sizes for skewering.
  2. Thread a cherry tomato onto a skewer, followed by a mozzarella ball, a folded slice of salami, and a piece of bell pepper. Repeat until the skewer is filled, leaving some space at the ends.
  3. Add slices of cucumber and olives to each skewer for extra flavor and crunch.
  4. In a separate bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, honey, salt, and pepper to create the dressing.
  5. Drizzle the dressing over the prepared skewers or serve it on the side for dipping. Garnish with fresh basil leaves before serving.

Notes

Tip: Marinate skewers in the dressing for enhanced flavor before serving.

For the best results, let your skewers marinate in the dressing for at least 30 minutes before serving; this enhances the flavor profile. If you’re short on time, you can substitute the homemade dressing with a store-bought balsamic vinaigrette.

Feel free to mix and match the ingredients—try adding marinated artichoke hearts, olives, or even grilled shrimp for a twist! These skewers are best enjoyed fresh but can be stored in the refrigerator for up to two days. Just remember to keep the dressing separate until you are ready to serve.

Ingredients

INGREDIENTS

  • 12 sheets of phyllo dough
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1 large egg
  • 1 tablespoon curry powder
  • Salt and pepper to taste
  • 1/4 cup melted butter

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, ricotta cheese, feta cheese, egg, curry powder, salt, and pepper. Mix until well combined.
  3. Unroll the phyllo dough and cut it into squares large enough to fit into a muffin tin. Brush each square lightly with melted butter.
  4. Layer 3-4 sheets of phyllo in each muffin cup, pressing them gently into the bottom and sides to create a cup shape.
  5. Spoon the spinach and cheese mixture into each phyllo cup, filling them generously.
  6. Bake in the preheated oven for 15 minutes or until the phyllo is golden brown and crispy.
  7. Allow to cool slightly before removing from the muffin tin. Serve warm or at room temperature.

Notes

For a gluten-free option, use gluten-free phyllo dough.

For best results, ensure your phyllo dough remains covered with a damp cloth while you work, as it can dry out quickly. You can customize the filling by adding cooked chicken or chickpeas for extra protein.

If you have leftovers, store them in an airtight container in the fridge for up to 2 days. Reheat in the oven to maintain their crispiness before serving.

Ingredients

INGREDIENTS

  • 20 cherry tomatoes
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) if you prefer to roast the tomatoes lightly.
  2. Slice the tops off the cherry tomatoes and carefully scoop out the insides using a small spoon or a melon baller.
  3. In a mixing bowl, combine the ricotta cheese, grated Parmesan, chopped basil, chopped parsley, olive oil, salt, and pepper. Mix until well combined.
  4. Using a piping bag or a small spoon, fill each cherry tomato with the herbed ricotta mixture until they are generously filled.
  5. Arrange the stuffed tomatoes on a serving platter. Drizzle with balsamic glaze for an extra touch of flavor if desired.

For a twist on flavor, try adding some crushed garlic or a splash of lemon juice to the ricotta mixture. You can also substitute the herbs with your favorites, like dill or chives, to personalize the taste. If you have leftover filling, it works great as a spread on crackers or toasted bread.

These stuffed tomatoes are best enjoyed fresh, but you can prepare them a few hours in advance and store them in the refrigerator. Just be careful not to stuff them too far in advance to avoid sogginess. Serve them chilled or at room temperature for the best flavor.

Ingredients

INGREDIENTS

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 avocado
  • 2 tablespoons lime juice
  • 1/4 cup Greek yogurt or sour cream
  • Fresh cilantro for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and slice the sweet potatoes into 1/4 inch thick rounds.
  3. In a large bowl, toss the sweet potato slices with olive oil, chili powder, cumin, smoked paprika, salt, and pepper until evenly coated.
  4. Arrange the seasoned sweet potato slices in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, flipping halfway through, until the edges are crispy and the centers are tender.
  6. While the sweet potatoes are baking, prepare the avocado drizzle. In a blender, combine avocado, lime juice, Greek yogurt, salt, and pepper. Blend until smooth and creamy.
  7. Once the sweet potatoes are done, layer them on a serving platter, drizzling the avocado sauce generously over each stack.
  8. Garnish with fresh cilantro before serving. Enjoy warm!

Notes

The avocado drizzle can be made ahead of time and stored in the refrigerator for up to 48 hours, just make sure to cover it well to prevent browning.

For added texture, consider topping your nacho stacks with black beans or corn for a heartier bite. If you’re looking for a quicker option, you can buy pre-sliced sweet potatoes in the produce section or use store-bought guacamole instead of making the avocado drizzle.

These nacho stacks can be stored in an airtight container in the fridge for up to three days. To reheat, just microwave for a minute or two, but for the best texture, consider reheating in an oven or toaster oven to maintain that crispy edge!

Ingredients

INGREDIENTS

  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup crumbled feta cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup chopped fresh basil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5 minutes.
  4. Stir in the sun-dried tomatoes and fresh basil, cooking for another minute until fragrant.
  5. Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle the feta cheese on top.
  6. Cook on the stovetop for 5 minutes, or until the edges start to set.

Notes

To keep your frittata fluffy, avoid overcooking the eggs. Cook them just until they are set around the edges and slightly jiggly in the center, as they will continue to cook off the heat. If you want to add more veggies, consider incorporating spinach or bell peppers for extra color and nutrition.

For a quicker meal, you can prep the veggies and sun-dried tomatoes ahead of time. Leftover frittata can be stored in the refrigerator for up to 3 days, making it a great option for busy mornings.

  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mango, diced
  • 1/2 cup pineapple, diced
  • 1/2 kiwi, sliced
  • Fresh mint leaves for garnish

Instructions
