Ingredients

INGREDIENTS

  • 12 large mushroom caps
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh thyme, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic glaze

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the mushroom caps and remove the stems. Set the caps aside and finely chop the stems.
  3. In a skillet, heat olive oil over medium heat. Add the chopped stems and garlic, sautéing until soft and fragrant, about 3 minutes.
  4. In a mixing bowl, combine the sautéed mushroom stems and garlic with the cheddar cheese, breadcrumbs, fresh thyme, salt, and pepper. Mix until well combined.
  5. Stuff each mushroom cap generously with the cheese mixture, pressing it down lightly.
  6. Place the stuffed mushroom caps on a baking sheet lined with parchment paper, and drizzle with extra olive oil if desired.
  7. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is bubbling and golden brown.
  8. Remove from the oven and drizzle with balsamic glaze before serving. Enjoy!

Notes

Store leftover stuffed mushrooms in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.

For a creamier filling, mix in a little cream cheese along with the cheddar. You can also experiment by adding chopped cooked bacon or spinach for extra flavor. If you have leftovers, store the stuffed caps in an airtight container in the fridge for up to 3 days. Reheat them in an oven to maintain their crisp texture.

Feel free to substitute the cheddar with your favorite cheese varieties such as mozzarella or feta for a different twist!
