  • 4 oz dark chocolate, chopped
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup all-purpose flour
  • 1/4 cup sweetened shredded coconut
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 425°F (220°C) and grease four ramekins with butter and dust with flour.
  2. In a microwave-safe bowl, melt the butter and dark chocolate together in 30-second intervals, stirring until smooth.
  3. In a separate bowl, whisk together the sugar, eggs, and egg yolks until pale and fluffy.
  4. Add the melted chocolate mixture to the egg mixture, stirring gently to combine.
  5. Fold in the flour, shredded coconut, vanilla extract, and salt until just mixed.
  6. Divide the batter evenly among the prepared ramekins and place them on a baking sheet.
  7. Bake for 10-12 minutes or until the edges are firm but the center is soft.
  8. Remove from the oven and let the cakes cool for 1 minute before inverting them onto plates.
  9. Garnish with additional shredded coconut and serve immediately. Enjoy!

Notes

Storage: These lava cakes are best served fresh but can be refrigerated for up to 2 days. Reheat in the microwave for 10-15 seconds before serving.

For best results, ensure your ramekins are well greased to prevent sticking. If you want to make these ahead of time, you can prepare the batter and store it in the fridge for up to 24 hours. Just add a few extra minutes to the baking time if they go into the oven straight from the fridge.

Feel free to swap out the coconut for other ingredients, like crushed nuts or a different type of chocolate, to customize the flavor.
