Ingredients

INGREDIENTS

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • ½ cup cold unsalted butter, cubed
  • 4-6 tablespoons ice water
  • 8-10 fresh figs, sliced
  • ½ cup pomegranate seeds
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1 egg, beaten (for egg wash)

Instructions

  1. In a mixing bowl, combine flour, salt, and sugar. Add cold butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Form into a disc, wrap in plastic, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. On a floured surface, roll out the dough into a 12-inch circle. Transfer to a parchment-lined baking sheet.
  5. In a bowl, combine sliced figs, pomegranate seeds, honey, and cornstarch. Toss to coat the fruit evenly.
  6. Place the fruit mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the filling, pleating as necessary.
  7. Brush the crust with beaten egg to create a golden finish.
  8. Bake for 30-35 minutes or until the crust is golden and the fruit is bubbly. Allow to cool slightly before serving.

Notes

Tip: Serve warm or at room temperature, and drizzle with additional honey before serving for extra sweetness.

For best results, use ripe figs for sweetness and juiciness. If figs are unavailable, pears or apples can be a lovely substitute.

Make sure to chill the dough thoroughly to help achieve a flaky texture. Leftover galette can be stored in the refrigerator for up to three days. Serve it warm or at room temperature, and consider topping it with a scoop of vanilla ice cream for an extra indulgent treat.
