- 8 large eggs
- 1 cup fresh spinach, chopped
- 1 cup mushrooms, diced (cremini or button)
- 1/2 cup onion, finely chopped
- 1/2 cup milk
- 1/2 cup shredded cheese (cheddar or feta)
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin with non-stick spray or olive oil.
- In a skillet, heat the olive oil over medium heat. Add the onions and sauté until translucent, about 3-4 minutes.
- Add the diced mushrooms to the skillet and cook until they are softened and browned, about 5 minutes. Stir in the chopped spinach and cook until just wilted. Remove from heat.
- In a large mixing bowl, whisk together the eggs, milk, dried herbs, salt, and pepper until well combined.
- Stir in the sautéed vegetable mixture and half of the shredded cheese into the egg mixture.
- Divide the egg and vegetable mixture evenly among the muffin tin cups, filling each about 3/4 full. Sprinkle the remaining cheese on top of each cup.
- Bake in the preheated oven for 15-20 minutes, or until the frittata cups are puffed and lightly golden on top. Allow to cool for a few minutes before removing from the tin. Serve warm or at room temperature.
