Ingredients

  • 4 large bell peppers (any color)
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 lemon (zest and juice)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 cup spinach, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the quinoa is fluffy.
  4. In a large bowl, combine the cooked quinoa, lemon zest, lemon juice, cherry tomatoes, red onion, spinach, olive oil, oregano, thyme, salt, and pepper.
  5. Spoon the quinoa mixture into each bell pepper, packing it in gently.
  6. Place the stuffed peppers upright in a baking dish and cover with foil.
  7. Bake for 25-30 minutes, until the peppers are tender. Remove the foil for the last 5 minutes to allow the tops to brown slightly.
