INGREDIENTS

  • 12 mini sweet peppers
  • 4 cloves garlic, roasted
  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the mini peppers in half lengthwise and remove the seeds. Place them cut-side up on a baking sheet.
  3. In a mixing bowl, combine the roasted garlic, chopped spinach, cream cheese, Parmesan cheese, salt, pepper, olive oil, and Italian seasoning. Mix until well combined.
  4. Spoon the mixture evenly into each mini pepper half, pressing gently to pack the filling.
  5. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the filling is slightly golden.
  6. Remove from the oven and let cool for a few minutes before serving. Enjoy warm!

Notes

Tip: For extra flavor, drizzle with balsamic glaze before serving.

For a vegan option, substitute the cheese with nutritional yeast or a plant-based cheese alternative. You can also add other vegetables such as mushrooms or zucchini to the filling for added texture and flavor. If you prefer a bit of spice, consider sprinkling some red pepper flakes into the filling.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a preheated oven at 350°F (175°C) for about 10-15 minutes or until heated through. Enjoy these mini peppers warm for the best taste!
