  • 1 ripe avocado
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

  • Fresh herbs for garnish (optional)

  2. In a bowl, toss the drained chickpeas with olive oil, cumin, smoked paprika, salt, and pepper.
  3. Spread the seasoned chickpeas on a baking sheet and roast for 15 minutes until crispy, stirring halfway through.
  4. While the chickpeas are roasting, mash the ripe avocado in a separate bowl and mix in lemon juice, salt, and pepper to taste.
  5. Toast the bread slices until golden and crisp.
  6. Once the chickpeas are done, assemble the toast by spreading the avocado mixture on each slice of bread and topping with roasted chickpeas.
  7. Garnish with fresh herbs if desired and serve immediately.

Notes

Quick Tip: For added flavor, sprinkle some red pepper flakes on top for a spicy kick!

For the best results, use ripe avocados that yield slightly to pressure. If you’re short on time, canned chickpeas work perfectly; just be sure to rinse and drain them well. You can also swap out the spices based on your preference—cumin and smoked paprika add a wonderful earthiness, but feel free to experiment!

This dish is best enjoyed fresh, but if you have leftovers, store the chickpea topping in an airtight container for up to 3 days in the fridge. To reheat, simply warm them in a pan over medium heat before layering them on your toast.
