Ingredients

INGREDIENTS

  • 1 sheet of puff pastry, thawed
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta cheese
  • 1 egg, beaten
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Sesame seeds for topping (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a lightly floured surface and cut it into 3-inch squares.
  3. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant.
  4. Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
  5. In a bowl, combine the cooked spinach, feta cheese, ricotta cheese, and season with salt and pepper.
  6. Place a tablespoon of the filling in the center of each puff pastry square.
  7. Fold the corners of the pastry over the filling to create a pocket and press to seal.
  8. Brush the tops with beaten egg and sprinkle with sesame seeds if desired.
  9. Arrange the bites on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.

Notes

Tip: Use fresh spinach for the best flavor; frozen spinach can make the filling watery if not thoroughly drained.

For added flavor, consider mixing in some herbs like dill or parsley with the filling. If you’re looking to make these bites healthier, you can use whole wheat puff pastry and reduce the amount of feta.

Leftover puff pastry bites can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in the oven at 350°F (175°C) for about 10 minutes to regain their crispiness.
