PORK TENDERLOIN

  • 1.5–2 pounds pork tenderloin, trimmed
  • 2 tablespoons olive oil

CHERRY-BALSAMIC GASTRIQUE

  • 1 cup fresh or frozen pitted cherries
  • 1/4 cup balsamic vinegar
  • 2 tablespoons granulated sugar
  • 1 small shallot, finely chopped
  • Pinch of salt
  • 1 tablespoon unsalted butter (optional, for shine)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the coffee, smoked paprika, garlic powder, brown sugar, salt, black pepper, and cayenne (if using) in a small bowl, stirring until evenly blended.
