Ingredients

INGREDIENTS

  • 1 bunch kale, stems removed and leaves chopped
  • 1 cup pomegranate seeds
  • 1 large grapefruit, segmented
  • 1 orange, segmented
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup toasted almonds, chopped

FOR THE DRESSING

  • 1/4 cup fresh pomegranate juice
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the chopped kale, pomegranate seeds, grapefruit segments, orange segments, red onion, and toasted almonds.
  2. In a small bowl, whisk together the pomegranate juice, olive oil, honey, apple cider vinegar, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  4. Let the salad sit for about 5 minutes to allow the kale to soften slightly before serving.
  5. Serve chilled or at room temperature.

Notes

Tip: For an extra zing, add a squeeze of lemon juice to the dressing or sprinkle some feta cheese on top before serving.

For a heartier salad, consider adding some grilled chicken or chickpeas for protein. If you prefer a different nut, walnuts or pecans would also work beautifully in this recipe.

To store leftovers, keep the salad and dressing separate until ready to eat to maintain freshness. This salad can last in the fridge for about 2 days, but the kale will begin to wilt over time.
