Instructions
- Preheat the oven to 400°F (200°C).
- Toss the butternut squash cubes with 1 tablespoon of olive oil, salt, pepper, garlic powder, and smoked paprika on a baking sheet.
- Spread the squash in a single layer and roast for 25 minutes, or until tender and slightly caramelized, tossing halfway through.
- While the squash is roasting, heat a large skillet over medium heat and add the pumpkin seeds. Toast for 3-5 minutes until golden brown, stirring frequently.
