Ingredients

INGREDIENTS

  • 8 slices of brioche or challah bread, cubed
  • 1 cup fresh blueberries
  • 1 cup milk
  • 4 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon butter, for greasing

Instructions

  1. Grease a 9x13 inch baking dish with butter.
  2. In a large bowl, whisk together the milk, eggs, sugar, lemon juice, lemon zest, vanilla extract, cinnamon, and salt until well combined.
  3. Arrange half of the cubed bread in the prepared baking dish and sprinkle half of the blueberries over the top.
  4. Pour half of the custard mixture over the bread and blueberries, making sure to coat them evenly.
  5. Add the remaining bread cubes and top with the remaining blueberries.
  6. Pour the rest of the custard mixture over the top, ensuring all bread is soaked. Press down gently if needed.
  7. Cover the dish with plastic wrap and refrigerate overnight (or at least for 4 hours).
  8. Preheat the oven to 350°F (175°C).
  9. Remove the casserole from the refrigerator and let it sit at room temperature for 15 minutes before baking.
  10. Bake for 40-45 minutes or until the top is golden brown and the custard is set. Let cool for a few minutes before serving.

Notes

Tip: For an added crunch, consider sprinkling some chopped nuts on top before baking!

For the best texture, use day-old bread or a thicker loaf like brioche or challah. If you want to make this dish even healthier, consider swapping out half of the milk for Greek yogurt for added protein.

Once baked, you can top the casserole with a dusting of powdered sugar or a drizzle of maple syrup for extra sweetness. Leftovers can be stored in the refrigerator for up to 3 days and are delicious reheated in the microwave!
