Ingredients

INGREDIENTS

  • 1 cup pistachios, shelled and unsalted
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup fresh lemon juice
  • 1/4 cup powdered sugar
  • Zest of 1 lemon
  • Chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, combine the pistachios, granulated sugar, flour, melted butter, vanilla extract, and salt. Pulse until the mixture is crumbly.
  3. Press the pistachio mixture into the bottom and sides of a mini muffin tin to form small tartlet shells. Bake for 10-12 minutes until lightly golden.
  4. In a mixing bowl, whisk the eggs, then add lemon juice, powdered sugar, and lemon zest. Mix until well combined.
  5. Pour the lemon filling into the baked tartlet shells, filling each about 3/4 full.
  6. Return the tartlets to the oven and bake for an additional 5-7 minutes, until the filling sets.
  7. Remove from the oven and let cool before garnishing with chopped pistachios. Serve chilled or at room temperature.

Notes

Tip: Adjust the sweetness of the filling by varying the amount of powdered sugar based on your preference.

For a gluten-free option, you can substitute regular flour with almond flour. Additionally, if you prefer a sweeter tart, feel free to add more sugar to the filling.

These tartlets can be stored in the refrigerator for up to 3 days. To maintain their freshness, cover them with plastic wrap. They are best enjoyed chilled or at room temperature!
