  • 2 cups water
  • 1 ripe mango, diced
  • 1 red bell pepper, diced
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup peanuts, roasted and chopped
  • 1/4 cup fresh cilantro, chopped

FOR THE DRESSING

  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon honey
  • 1 tablespoon sriracha
  • 1 tablespoon sesame oil

Instructions

  1. Rinse quinoa under cold water and drain. In a saucepan, bring 2 cups of water to a boil, add quinoa, reduce heat to low, cover, and let simmer for 15 minutes or until water is absorbed.
