Ingredients

FOR THE TOAST

  • 4 slices sourdough bread
  • 2 tablespoons olive oil

FOR THE WHIPPED FETA

  • 6 ounces feta cheese, crumbled
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • Freshly ground black pepper, to taste

FOR THE CHILI-HONEY DRIZZLE

  • 3 tablespoons honey
  • 1 teaspoon red pepper flakes
  • 1 tablespoon lime juice

FOR THE CRISPY SHALLOTS

  • 2 large shallots, thinly sliced
  • 1/2 cup vegetable oil
  • Salt, to taste

Instructions

  1. In a food processor, combine feta cheese, Greek yogurt, lemon juice, olive oil, and black pepper; blend until smooth and set aside.
  2. Heat vegetable oil in a small skillet over medium heat. Add sliced shallots and fry until golden brown and crisp, about 3–4 minutes. Use a slotted spoon to transfer to a paper towel-lined plate and season with salt.
  3. In a small bowl, whisk together honey, red pepper flakes, and lime juice until combined; set aside.
  4. Brush sourdough slices with olive oil on both sides. Toast in a hot skillet or under the broiler until golden and crisp, about 2–3 minutes per side.
  5. Slice avocado halves; brush flesh with oil and char on a hot grill pan or skillet for 1–2 minutes per side until grill marks appear.
  6. Spread whipped feta evenly over each toast, then arrange charred avocado slices on top.
  7. Drizzle chili-honey mixture over the avocado toasts.
  8. Finish by sprinkling crispy shallots on top, garnish with microgreens or fresh herbs, and serve immediately.

Notes

Tip: For extra heat, drizzle a few drops of hot sauce over the finished toast. Leftover whipped feta can be stored in an airtight container for up to 3 days.

Tips & Variations

  • Char the avocado on a preheated grill pan or under the broiler for extra smokiness.
  • Substitute Greek yogurt for extra tang or swap feta with cream cheese for a milder profile.
  • Add fresh herbs like chopped cilantro, dill, or mint for brightness.

Storage & Reheating

Keep the whipped feta and chili-honey drizzle in separate airtight containers in the fridge for up to 3 days. Fry the shallots just before serving to maintain crispness, and assemble the toast right before eating to preserve textures.
