Bright blue butterfly pea flower tea and zesty lemon sherbet come together in a whimsical soda that dazzles the senses. The floral notes of the pea tea pair beautifully with the tang of lemon sherbet, creating a layered flavor you won’t forget.
Chewy vanilla bean–infused tapioca pearls add a playful texture, making each sip an adventure. This nonalcoholic mocktail is easy to assemble and makes a stunning centerpiece for warm-weather gatherings.
Ingredients
FOR THE SODA
- 2 tablespoons dried butterfly pea flowers
- 2 cups hot water
- 4 scoops lemon sherbet
- 2 cups chilled club soda or sparkling water
- Ice cubes
- Lemon slices, for garnish
FOR THE VANILLA BEAN PEARLS
- 1/2 cup small tapioca pearls
- 2 cups water
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla bean paste or seeds from 1 vanilla bean
Instructions
- Bring 2 cups water to a gentle boil and stir in tapioca pearls. Cook according to package instructions, about 6–8 minutes, stirring occasionally.
- Once pearls are translucent, add sugar and vanilla bean paste. Simmer 1 minute until syrup thickens. Remove from heat, rinse pearls under cold water, then set aside in a small bowl.
- Meanwhile, steep butterfly pea flowers in 2 cups hot water for 5 minutes until deep blue. Strain out flowers and chill tea until cool.
- Scoop 1 tablespoon of cooled tapioca pearls into each glass.
- Add two scoops of lemon sherbet atop the pearls, then fill glasses halfway with ice.
- Pour 1/2 cup chilled butterfly pea tea into each glass, then top with 1/2 cup club soda.
- Gently stir to create a swirling ombré effect. Garnish with a lemon slice and serve immediately.
Notes
Note: Serve immediately to enjoy the sherbet’s creamy texture and the pearls’ chew. Leftovers separate and lose fizz.

- Infuse tea in advance: Chill the butterfly pea infusion for at least an hour to ensure vibrant color and cool serve temperature.
- Prevent sticky pearls: Rinse cooked tapioca in cold water and briefly toss in a drop of neutral oil to keep them from clumping.
- Flavor swaps: Use lime sherbet for a sharper citrus kick or add a sprig of mint for herbal freshness.
- Storage: Store tea and pearls separately in airtight containers in the fridge and consume within 24 hours for best texture.
