Ingredients

FOR THE SODA

  • 2 tablespoons dried butterfly pea flowers
  • 2 cups hot water
  • 4 scoops lemon sherbet
  • 2 cups chilled club soda or sparkling water
  • Ice cubes
  • Lemon slices, for garnish

FOR THE VANILLA BEAN PEARLS

  • 1/2 cup small tapioca pearls
  • 2 cups water
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla bean paste or seeds from 1 vanilla bean

Instructions

  1. Bring 2 cups water to a gentle boil and stir in tapioca pearls. Cook according to package instructions, about 6–8 minutes, stirring occasionally.
  2. Once pearls are translucent, add sugar and vanilla bean paste. Simmer 1 minute until syrup thickens. Remove from heat, rinse pearls under cold water, then set aside in a small bowl.
  3. Meanwhile, steep butterfly pea flowers in 2 cups hot water for 5 minutes until deep blue. Strain out flowers and chill tea until cool.
  4. Scoop 1 tablespoon of cooled tapioca pearls into each glass.
  5. Add two scoops of lemon sherbet atop the pearls, then fill glasses halfway with ice.
  6. Pour 1/2 cup chilled butterfly pea tea into each glass, then top with 1/2 cup club soda.
  7. Gently stir to create a swirling ombré effect. Garnish with a lemon slice and serve immediately.

Notes

Note: Serve immediately to enjoy the sherbet’s creamy texture and the pearls’ chew. Leftovers separate and lose fizz.
