Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 1/2 tsp saffron threads
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 tbsp curry powder
  • 1 tbsp fish sauce (or soy sauce for a vegetarian option)
  • 1 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 cups jasmine rice
  • 2 1/2 cups water
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Soak saffron threads in 2 tablespoons of warm water for 10 minutes.
  2. In a pan, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add garlic and ginger, cooking until fragrant, about 1 minute.
  4. Stir in curry powder and cook for an additional minute, then pour in the coconut milk, saffron water, fish sauce, and lime juice; bring to a simmer.
