Ingredients
INGREDIENTS
- 1 cup all-purpose flour
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cardamom
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 3/4 cup chopped pistachios
- 1/4 cup chopped dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, combine the all-purpose flour, almond flour, baking powder, baking soda, salt, and ground cardamom. Whisk together and set aside.
- In a separate large bowl, cream the softened butter and sugar together until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined.
- Fold in the chopped pistachios and dried fruit, if using, until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Tip: For extra flavor, toast the pistachios lightly before chopping and adding them to the batter.
For a nut-free version, simply replace the pistachios with sunflower seeds. You can also substitute cardamom with cinnamon if you prefer a more familiar flavor.
If you have any leftovers, store them in an airtight container at room temperature for up to three days. To reheat, pop them in the microwave for a few seconds or toast them lightly for a warm treat!
