Ingredients
INGREDIENTS
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup sweetened shredded coconut
- 1 tablespoon freshly grated ginger
- 1/2 cup powdered sugar
- 1-2 tablespoons lime juice
- Zest of 1 lime
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a saucepan, combine water and butter over medium heat until the butter melts.
- Add flour and salt to the boiling mixture, stirring vigorously until the dough forms and pulls away from the sides of the pan.
- Remove from heat and let cool for 5 minutes. Then, add eggs one at a time, mixing well after each addition until smooth.
- Spoon the dough into a piping bag and pipe small mounds onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 20-25 minutes or until golden brown and puffed. Do not open the oven door during baking.
- Remove from the oven and let cool completely on a wire rack.
- In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in shredded coconut and ginger until combined.
- Once the puffs are cool, make a small incision in the side of each and fill with coconut-ginger cream using a piping bag.
- In a separate bowl, mix powdered sugar, lime juice, and lime zest until smooth to create the glaze.
- Drizzle the lime glaze over the filled cream puffs just before serving. Enjoy!
Notes
Storage: Cream puffs are best eaten fresh, but you can store them in an airtight container in the refrigerator for up to 2 days.
To ensure your cream puffs rise well, make sure to not open the oven door during baking. If you want to make these ahead of time, you can prepare the cream filling and store it in the refrigerator, then fill the puffs just before serving to keep them fresh.
Feel free to experiment with different citrus glazes; orange or grapefruit can add another layer of brightness!
