  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup honey
  • 1/2 cup heavy cream
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 1 teaspoon dried culinary lavender
  • 2 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour, sugar, melted butter, vanilla extract, and salt until a dough forms.
  3. Press the dough into the bottom and sides of a tartlet pan or individual tartlet molds.
  4. Prick the base with a fork and bake for 12-15 minutes or until lightly golden. Let cool.
  5. In a saucepan over medium heat, combine the heavy cream, honey, lemon juice, lemon zest, lavender, and cornstarch. Stir until thickened, about 5 minutes.
  6. Remove from heat and let it cool slightly before adding the egg. Stir until well combined.
  7. Pour the lemon-lavender filling into the cooled tartlet shells and return to the oven for an additional 10-12 minutes, or until set.
  8. Allow to cool completely before drizzling with honey and serving.

Notes

Tip: Ensure the lavender used is culinary-grade to avoid any harmful additives.

For an even more pronounced lavender flavor, consider steeping the lavender in the cream for a few minutes before adding it to the filling. Just be cautious not to overpower the lemon’s brightness.

These tartlets can be made a day in advance. Simply store them in an airtight container in the refrigerator, and add the honey drizzle right before serving to keep the tartlets fresh.
