  • 2 cups vegetable broth
  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach leaves

Instructions

  1. Rinse quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine quinoa and vegetable broth, then bring to a boil. Reduce heat, cover, and simmer for about 15 minutes or until liquid is absorbed and quinoa is fluffy.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add shrimp to the skillet and season with salt and pepper. Cook for 3-4 minutes until shrimp are pink and opaque, stirring occasionally.
  4. Stir in lemon zest, lemon juice, chopped dill, halved cherry tomatoes, and spinach. Cook for an additional 2-3 minutes until spinach is wilted and tomatoes are slightly softened.
