Ingredients
INGREDIENTS
- 1 lb pork tenderloin
- 2 tbsp gochujang
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp sesame oil
- 1 bunch broccolini
- 1 tbsp sesame seeds
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix gochujang, soy sauce, honey, rice vinegar, garlic, ginger, and sesame oil to create the marinade.
- Season the pork tenderloin with salt and pepper, then place it in a resealable bag or a dish and pour the marinade over it. Let it marinate in the refrigerator for at least 1 hour.
- Heat vegetable oil in a skillet over medium-high heat. Sear the marinated pork for about 2-3 minutes on each side until browned.
- Transfer the pork to a baking dish and pour any remaining marinade over it. Bake in the oven for 15-20 minutes until the internal temperature reaches 145°F (63°C).
- While the pork is baking, blanch broccolini in boiling water for 1-2 minutes, then drain and rinse with cold water to stop the cooking process.
- In a skillet, sauté the blanched broccolini in a splash of sesame oil for 3-4 minutes. Sprinkle with sesame seeds before serving.
- Once the pork is done, let it rest for 5 minutes before slicing it into medallions. Serve with sesame broccolini on the side.
Notes
Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or skillet.
For the best results, allow the pork tenderloin to marinate for at least an hour before cooking to enhance the flavors. If you don’t have gochujang, you can substitute with sriracha, but the flavor will differ slightly.
When cooking the broccolini, make sure to blanch it briefly to maintain its vibrant green color before sautéing. This dish can be served with steamed rice or noodles if you want to add more heartiness to the meal.
