Ingredients

INGREDIENTS

  • 1 lb tilapia fillets
  • 1 cup unsweetened shredded coconut
  • 1/2 cup panko breadcrumbs
  • 2 tsp curry powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1 cup all-purpose flour
  • 8 small tortillas
  • Vegetable oil for frying
  • 1 cup shredded cabbage
  • 1 cup diced pineapple
  • 1/4 cup chopped cilantro
  • 2 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. In a shallow dish, combine flour, curry powder, paprika, salt, and pepper. In another dish, beat the eggs. In a third dish, mix shredded coconut and panko breadcrumbs.
  2. Dip each tilapia fillet in the flour mixture, then in the egg, and finally coat with the coconut-panko mixture, pressing gently to adhere.
  3. Heat vegetable oil in a deep skillet over medium-high heat. Carefully add the coated tilapia fillets and fry for about 3-4 minutes per side, or until golden brown and crispy. Remove and drain on paper towels.
  4. In a mixing bowl, combine shredded cabbage, diced pineapple, cilantro, lime juice, salt, and pepper to make the slaw. Toss well to combine.
  5. Warm the tortillas in a dry skillet or microwave. Assemble the tacos by placing the crispy tilapia in each tortilla and topping with the pineapple slaw. Serve immediately.

Notes

For extra flavor, consider adding a squeeze of lime juice on top of the finished tacos.

For the best texture, make sure your oil is hot enough before frying the fish—around 350°F (175°C) is ideal. This ensures that the batter crisps up nicely without absorbing too much oil.

If you’re short on time, feel free to substitute the tilapia with any firm white fish. You can also make the pineapple slaw a few hours in advance to let the flavors meld together. Leftover tacos can be stored in the fridge, but for the best texture, consume them within a day.
