Ingredients

INGREDIENTS

  • 4 medium zucchinis
  • 1 lb ground lamb
  • 1 cup crumbled feta cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped
  • 1 cup marinara sauce (for drizzling)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis in half lengthwise and scoop out the seeds to create boats.
  3. In a skillet over medium heat, cook the chopped onion until translucent, about 5 minutes.
  4. Add the minced garlic, ground lamb, oregano, cumin, paprika, salt, and pepper. Cook until the lamb is browned and fully cooked, about 8-10 minutes.
  5. Remove from heat and stir in the crumbled feta cheese and chopped parsley.
  6. Fill each zucchini half with the lamb and feta mixture, pressing down gently.
  7. Place the stuffed zucchinis on a baking sheet and drizzle with marinara sauce over the top.
  8. Bake in the preheated oven for 25-30 minutes, or until the zucchinis are tender and the tops are slightly golden.
  9. Serve warm, garnished with extra parsley if desired.

Notes

Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven or microwave before serving.

For a twist on the traditional filling, consider adding chopped sun-dried tomatoes or olives for extra Mediterranean flair. If you prefer a leaner option, ground turkey or chicken can be used in place of lamb.

These zucchini boats can be prepared ahead of time and stored in the fridge until you’re ready to bake them. They reheat well, making them a great option for meal prep!
