  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems, setting them aside.
  3. In a skillet, heat olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  4. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  5. In a mixing bowl, combine the sautéed spinach, crumbled feta cheese, breadcrumbs, chopped parsley, dried oregano, salt, and pepper. Mix until well combined.
  6. Stuff each mushroom cap with the feta and spinach mixture, pressing down gently to pack it in.
  7. Place the stuffed mushrooms on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 15-20 minutes, or until the mushrooms are tender and the tops are golden brown.
  9. Remove from the oven and let cool slightly before serving. Enjoy!

Notes

Tip: Use a mix of different mushrooms for added flavor and texture.

For variations, feel free to swap the spinach for kale or add chopped sun-dried tomatoes for a tangy twist. If you’re looking for a gluten-free option, ensure your breadcrumbs are certified gluten-free.

To store leftovers, place them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for about 10 minutes to restore their deliciousness.
