Ingredients

INGREDIENTS

  • 1 cup Arborio rice
  • 4 cups chicken stock
  • 1 cup cooked chicken, shredded
  • 1 cup sliced mushrooms
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1/4 teaspoon saffron threads
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Heat the chicken stock in a saucepan and keep it warm over low heat.
  2. In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add the onions and sauté until translucent, about 3-4 minutes.
  3. Stir in the garlic and mushrooms, cooking until the mushrooms are soft and lightly browned.
  4. Add the Arborio rice to the skillet and toast for 1-2 minutes, stirring frequently until the rice is slightly translucent.
  5. Pour in the white wine and cook until it's mostly absorbed by the rice.
  6. Dissolve the saffron in a few tablespoons of the warm chicken stock and add it to the rice mixture.
  7. Start adding the warm chicken stock, one ladle at a time, stirring constantly until each addition is absorbed before adding the next. Repeat until the rice is creamy and al dente, about 18-20 minutes.
  8. Stir in the cooked chicken, remaining butter, and Parmesan cheese, and adjust the seasoning with salt and pepper.
  9. Remove from heat and let it sit for a couple of minutes before serving. Garnish with chopped parsley. Enjoy!

Notes

Tip: If you want a vegetarian version, substitute the chicken with additional mushrooms or seasonal vegetables and use vegetable stock instead of chicken stock.

For the best flavor, use homemade chicken stock if possible, as it enhances the overall taste of the risotto. If saffron is hard to find, a few drops of turmeric can provide a similar color, though the flavor will be different.

Ensure to stir the risotto continuously and add the stock gradually to achieve that creamy consistency. If you have leftovers, risotto can be stored in the refrigerator for up to 3 days; simply reheat gently on the stove, adding a splash of stock or water to loosen it up.

For variations, feel free to add peas or asparagus in the last few minutes of cooking for added color and nutrition!
