INGREDIENTS

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Tortilla chips, for serving
  • 1 cup shredded cheese (cheddar or dairy-free)
  • Salsa, for topping
  • Sour cream or yogurt, for drizzling (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spread the drained chickpeas on a baking sheet and pat dry with a paper towel.
  3. In a mixing bowl, combine olive oil, minced garlic, chopped rosemary, paprika, salt, and pepper.
  4. Pour the oil mixture over the chickpeas and toss until evenly coated.
  5. Roast the chickpeas in the oven for 20-25 minutes or until crispy, shaking the pan halfway through.
  6. Once chickpeas are crispy, remove from the oven and set aside.
  7. Prepare a serving platter with tortilla chips, then evenly distribute the roasted chickpeas over the chips.
  8. Sprinkle shredded cheese generously over the top.
  9. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbling.
  10. Top with salsa and a drizzle of sour cream or yogurt, if desired. Serve hot.

Notes

Tip: For extra crunch, broil the nachos for 1-2 minutes after baking, watching closely to avoid burning.

For the crispiest chickpeas, ensure they are dried thoroughly after rinsing. You can also experiment with different herbs or spices to customize the flavor!

If you’re looking to make this dish vegan, simply use a dairy-free cheese alternative. Store leftover nachos in an airtight container for up to 2 days, although they are best enjoyed fresh!
