Ingredients

INGREDIENTS

  • 1 can chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 1 large avocado, diced
  • Juice of 1 lime
  • 1 tablespoon chopped fresh cilantro
  • Mini phyllo cups or tortilla cups for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the drained chickpeas on a clean towel and pat them dry.
  3. In a bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, cayenne pepper, and salt until evenly coated.
  4. Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes, or until the chickpeas are crispy and golden brown, stirring halfway through to ensure even cooking.
  6. While the chickpeas are baking, prepare the avocado mixture by combining diced avocado, lime juice, and chopped cilantro in a bowl. Gently mix to combine.
  7. Once the chickpeas are done, let them cool slightly before assembling the cups.
  8. Spoon the avocado mixture into each mini cup, then top with the crispy chickpeas for garnish. Serve immediately.

Notes

Tip: For added flavor, sprinkle some feta cheese or a dollop of Greek yogurt on top before serving.

For an extra kick, consider adding a sprinkle of cayenne pepper or red pepper flakes to the chickpeas before baking. If you’re short on time, you can use canned chickpeas instead of dried; just make sure to rinse and dry them thoroughly for optimal crispiness.

These cups store well in the fridge for up to 2 days, but for the best texture, enjoy them fresh. To reheat, place the chickpeas back in the oven for a few minutes to crisp them up again before serving.
