Ingredients

INGREDIENTS

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cardamom
  • 1 cup buttermilk
  • 1/4 cup fresh orange juice
  • Zest of 1 orange
  • 2 large eggs, separated
  • 2 tablespoons melted butter
  • Cooking spray or oil for the pan

Instructions

  1. In a mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and ground cardamom.
  2. In another bowl, whisk together the buttermilk, orange juice, orange zest, egg yolks, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients, stirring gently until just combined; do not overmix.
  4. In a separate bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the pancake batter until just blended.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with cooking spray or oil. Pour 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 2-3 minutes or until golden brown.
  7. Repeat with the remaining batter, adjusting the heat as necessary.

Notes

Tip: Serve with a drizzle of maple syrup and a sprinkle of powdered sugar for extra sweetness!

For the best texture, be sure to separate the eggs and whip the egg whites until they form stiff peaks before folding them into the batter. This will ensure your pancakes are extra fluffy!

If you don’t have cardamom on hand, you can substitute it with a pinch of cinnamon or nutmeg for a different flavor profile. Store any leftover pancakes in the refrigerator for up to 2 days and reheat them in a toaster or microwave for a quick breakfast.
